An Easy Holiday Treat: Great For Sharing

Seems like every year, try as I might, I’m busier than the previous holiday season. Which means I need good food fast, and treats to exchange that come together even faster.

During big moments in life – tough times or happy times – my family turns to comfort food. It was just part of the way I was raised. If things were bad for you, neighbors brought food to help out. If you were celebrating, you did it over food.  A dinner or a treat, it seemed like every food had a purpose.

This recipe for Salted Nut Roll candy tastes very much like a Payday candy bar and was a family favorite at many of our annual events. This treat is so fast and easy to make I used to whip up a batch and divide it up for my friends for Christmas gifts at school. Or a picnic. Or no reason at all.

My friends always loved this one and giving it away is the best way to ease the caloric impact!

Ingredients

3 cups salted peanuts without skins, divided
2-1/2 tablespoons butter
2 cups peanut butter chips
1 can (14 ounces) sweetened condensed milk
2 cups miniature marshmallows
 

Directions 

Use half of the peanuts to cover the bottom of an ungreased 11-in. x 7-in. dish and set aside. In a large saucepan, melt butter and peanut butter chips over low heat; stirring until the mixture is smooth. Remove from the heat. Add sweetened condensed milk and marshmallows and stir until melted.

Pour the mixture over peanuts in the dish. Sprinkle the remaining peanuts on top. Let set completely and then cut into small bars.
