Baked Feta and Tomatoes

This month’s recipe is from Jess Keller (heroine of Island Homecoming). It’s one of her favorite appetizers to add to the table when she and Nash join his parents for dinner.

Ingredients

1 pint cherry tomatoes

4 ounces Feta cheese (block, not crumbled) 

3 Tablespoons extra virgin olive oil

Black pepper, to taste

Oregano, to taste

Directions

Heat oven to 350.

In a shallow baking dish, toss cherry tomatoes with 2 Tablespoons olive oil. Place the block of Feta in the center of the dish, nudging the tomatoes to the edges. Sprinkle cheese with pepper and oregano to taste. Drizzle cheese with remaining olive oil.

Bake, uncovered, for 30-35 minutes.

Serve with crackers as a yummy appetizer or over cooked bite-sized pasta for an easy meal.
