Spicy Pork Noodles

Sometimes when the writing stalls out I go recipe hunting. For some inexplicable reason, it usually gives my muse a nudge. (I found the recipe below at this website. She shares loads of yummy recipes.) Hope you enjoy this one as much as we did.

Ingredients

1 tablespoon extra virgin olive oil

1 pound pork loin, sliced very thin

1 clove garlic, minced

⅓ cup brown sugar

½ cup soy sauce

1 tablespoon chili garlic sauce

6 ounces ramen noodles, any flavor

1 tablespoon green onions, sliced

Directions

In a medium saucepan, boil water. Add ramen noodles (but leave out the flavor packet if included). Cook for 3 minutes. Drain the noodles and set them aside.

In a large skillet over medium heat, heat oil until it sizzles. Add sliced pork and cook until just brown.

Add garlic and cook until fragrant (about 1 minute).

Add brown sugar, soy sauce, and chili garlic sauce. Stir well.

Reduce heat to medium-low, cover and simmer for 5 minutes.

Add noodles and stir to combine.

Serve immediately, garnished with green onions.

4 servings

Enjoy!
